How many times has it happened to us, greedy or not, to find ourselves casually walking in front of some showcase overflowing with sweets, cakes or biscuits of all kinds and to devour everything with our eyes, as well as really wanting to do it? And how many times in the restaurant have our mouths watered by intercepting the waiter intent on serving dessert to the customers at the next table?
How many other times, on the other hand, having arrived at the pastry shop or ice cream parlor with the fixed idea and the great desire to get a portion of that dessert or enjoy a nice ice cream with our favorite flavor, we left disappointed strong> without finding anything that met our high expectations?
It is absolutely undeniable that in the field of cooking and, above all, pastry, ice cream, chocolate and confectionary craftsmanship in general, even the eye wants his part. Above all, it is what we see that guides us in the very first phase of selecting what we will taste or eat: taste comes to the next step.
Refrigerated display cases: not just furniture
Before the magic of flavors that master pastry chefs and ice cream makers are able to obtain from the fusion of art and ingredients, it is the good and beautiful presentation of the products that directs the preferences of who stands in front of the counter.
From this point of view, the role of refrigerated display cases is fundamental, as they contain, preserve and display the desserts made and which usually constitute the main furnishing element , by importance and size, of the rooms and premises that prepare and sell these delicacies.
They must be characterized by design and aesthetics, they must transmit elegance and sophistication as well as being able to give the right prominence and evidence to themselves on the one hand, and to enhance and enhance the surrounding environment on the other.
But, above all, refrigerated display cases must guarantee the highest quality of the products they contain, quality which depends on multiple factors combined in a very delicate balance: it is essential that they are able to ensure the optimal internal conditions for the conservation of sweets, suitable for the different types of products inside.

Whether we are dealing with pastries, frozen desserts, mousses, ice creams or anything else, each dessert requires specific temperature and humidity conditions which are, at the same time, influenced by the external environment and its extreme variability: temperatures very high or very low outdoors, exposure to the sun or heat sources, frequent and prolonged openings can in fact represent serious dangers for the contents of the showcases. These must therefore be isolated, adaptable and adjustable, so as to allow the maintenance of the ideal internal microclimate for the conservation of the products.
Talking about simple cold is not enough. Each dessert requires specific temperatures, not necessarily below zero as for ice cream, and even differences of a few degrees compared to those recommended can make the difference. This both from the point of view of the good conservation (for food safety purposes) of products made with easily perishable ingredients such as eggs, milk and derivatives, and from the point of view of beautiful presentation. In fact, who has never found themselves in front of showcases whose contents were impossible to see because they were frosted or misted or had to choose between partially melted or, on the contrary, too frozen cakes that gave the impression of being there for who knows how long?
This is precisely the task of an efficient refrigerated display case: it must preserve but also display the products in the best conditions.

Inside a refrigerated display case, sweets must always be clearly visible and beautiful to look at. Good visibility is obtained both through the provision of anti-mist and humidity regulation devices, and through the shape and geometry of the display case itself. The second, on the other hand, is that boring effect that can be found above all on icing-covered sweets and chocolate, which makes us perceive the colors in a distorted way and prevents us from grasping the more lively shades.
So the choice of the most suitable display case for your laboratory, pastry shop or establishment should not be made exclusively in terms of design and furnishings: of course, this is an important aspect that should not be overlooked, but even more so it is the guarantee of always offering the customer fresh, genuine and well-presented products.
